- Grease a 13 x 9-inch baking dish
Layered Mexican Casserole Recipe Ingredients
- 1 pound ground round (or ground turkey or chicken)
- 1 Tablespoon vegetable oil
- 1 large onion, chopped
- 2 Cups chunky-style salsa
- 2 Tablespoons Italian salad dressing
- 1 teaspoon hot sauce, or to taste (optional)
- 1 can (15 ounces) black beans, drained and rinsed
- 2 Tablespoons dry taco seasoning
- 8 corn tortillas (6-inch)
- 1 Cup Sour Cream
- 8 ounces Cheddar or Mexican-style cheese, shredded

Garnishes: shredded lettuce, shredded cheese, chopped tomatoes, sour cream, chopped green onions, cilantro, sliced black olives
Heat oil in large skillet over medium heat. Saute beef with onions until beef is browned and onions are tender. Drain fat. Stir salsa, dressing, hot sauce, beans and seasoning into beef.
Spread 1/2 Cup sauce evenly in bottom of prepared dish. Cover with 4 tortillas. Top with half the meat mixture, sour cream and cheese. Repeat one more time. Cover dish tightly with foil.
Bake 30 minutes on middle rack of a 400 degree oven, then remove foil. Continue baking about 10 more minutes or until cheese melts and casserole is heated through. Let stand 5 minutes before cutting.
Cut into squares and serve with garnishes, if desired.
