Cape Malay malva pudding recipe is a decadent dessert that is bursting with delicious textures and flavors.

What is malva pudding?

Malva pudding is a classic pudding of south African origin that is made using apricot jam and vinegar. This combination of vinegar and apricot jam gives this dessert a beautiful caramelization along with a soft and spongy interior. This cake is then covered with a rich cream sauce while it is hot which enables the cake to absorb it turning it into a soft, gooey, and delicious pudding. The pudding was essentially a winter dessert and so it was commonly served hot along with some ice cream or custard. 

Malva pudding

Ingredients:

For the batter

  • 1 tbsp butter
  • 1 cup sugar
  • 2 eggs
  • 1 tbsp apricot jam
  • 1 tsp baking soda
  • ½ cup milk
  • ¼ cup balsamic vinegar
  • 1 cup flour
  • ¼ tsp salt

 For the cream sauce

  • 1 cup heavy cream
  • ¾ cup sugar
  • 8 tbsp butter
  • ½ cup hot water
  • 1 tsp vanilla essence
Directions:
  1. Start by preheating the oven to 350 degrees F.
  2. Add the butter into a bowl with the sugar and mix together until well combined.
  3. Now add in the eggs one at a time and whisk together.
  4. Next, add in the apricot jam and mix well.
  5. Now add the milk, baking soda, and balsamic vinegar.
  6. Add in the flour slowly and continue to whisk making sure that there are no lumps produced.
  7. Now pour the batter into a greased baking tray and bake for 45 mins.
  8. Place a saucepan on medium-high heat and add in the heavy cream, sugar, butter, water, and vanilla essence and mix it all together.
  9. Continue to mix until it comes to a boil.
  10. Remove from flame and cover with a lid and set it aside.
  11. Once the pudding is done, pour the sauce over it so that the warm pudding will absorb the sauce and set aside for 15 mins.
  12. Serve with custard or ice cream.

Chocolate filled malva pudding

Chocolate filled malva pudding

Ingredients:

For the batter

  • Milk 80 ml
  • Flour 100 gm
  • Sugar 160 gm
  • Salt to taste
  • Baking soda 1 tsp
  • Eggs 2
  • Apricot jam 30 gm
  • Melted butter 15 gm
  • Red wine vinegar 15 ml
  • Chocolate 120 gm

For the sauce

  • Sugar 200 gm
  • Butter 140 gm
  • Water 80 ml
  • Milk 80 ml
  • Double cream 320 ml
Directions:
  1. Start by cutting up the chocolate into small pieces and set them aside.
  2. Add the flour, sugar, salt, and baking soda to a bowl and mix until well combined.
  3. Now add in the eggs and whisk until well incorporated.
  4. Add in the apricot jam, milk, vinegar, and melted butter and mix well.
  5. Pour the batter into a greased baking dish and bake for 30 mins at 200 degrees C.
  6. Once it is done, remove from oven, add in the chocolate pieces, and place in the oven for 10 mins more.
  7. Place a small saucepan over medium-high heat and add in the sugar, butter, water, milk, and cream and continue to stir until it comes to a boil.
  8. Pour it over the pudding and set it aside for at least 15 mins.
  9. Serve along with ice cream or custard.

Ingredients:

For the batter

  • 1 cup sugar
  • 2 eggs
  • 1 tbsp apricot jam
  • 1.5 cup flour
  • 1 tsp baking soda
  • Salt to taste
  • 2 tbsp butter
  • 1 tbsp vinegar
  • 125 ml milk

For the sauce

  • 250 ml cream
  • 125 ml butter
  • 125 ml sugar
  • 125 ml orange juice
Directions:
  1. Start by preheating the oven to 190 degrees C.
  2. Whisk together the sugar and the eggs until fluffy, then add in the jam and mix until well combined.
  3. In a separate bowl, mix together all the dry ingredients and set them aside.
  4. Place a small saucepan on medium heat and melt the butter.
  5. Once the butter has melted, add in the milk and the vinegar and mix well.
  6. Pour this mixture along with the egg mixture into the bowl containing the dry ingredients and combine well.
  7. Now pour it into a greased baking tray and bake for 45 mins.
  8. Place all the sauce ingredients into a saucepan over medium heat and stir until it comes to a boil.
  9. Once the cake is done, pour the sauce over the cake while it is still hot and serve after 15 mins.
