Brookie recipe is a decadent treat that combines two favorite sweet treats making it the best of both worlds.

What is a Brookie?

A Brookie is a portmanteau of cookies and brownies. This genius creation consists of a delicious, rich bar that is made with fudgy brownie batter and chocolate chip cookie dough and is perfect for when you can’t decide which sweet treat you rather have.

Original Brookies

Ingredients:

For the brownie batter

  • Unsalted butter ½ cup
  •  60% cacao chocolate bar 4 oz
  • Granulated sugar ½ cup
  • Brown sugar ½ cup
  • Vanilla extract 1 tsp
  • Salt ¼ tsp
  • Eggs 2
  • All-purpose flour ½ cup

Marshmallow Brookies

For the cookie dough

  • Unsalted butter ½ cup
  • Granulated sugar ⅓ cup
  • Brown sugar ⅓ cup
  • Vanilla extract ½ tsp
  • Egg 1
  • Salt ½ tsp
  • Baking powder ½ tsp
  • Baking soda ¼ tsp
  • All-purpose flour 1¼ cup
  • Chocolate chips ½ cup
Directions:
  1. Start by preheating the oven to 350 degrees F. Place parchment paper into a 13*9* 2-inch baking tray and grease it with butter or nonstick spray and set it aside.
  2. To make the brownie batter, put the butter in a bowl and melt it in the microwave.
  3. Once the butter has melted completely, add in the chocolate and mix until the chocolate is well combined.
  4. Now add in both the sugars, vanilla extract and salt and whisk well.
  5. Add in the eggs one at a time and continue to mix.
  6. Now add in the flour and mix until it is well combined and make sure that there are no lumps in the mixture.
  7. Now pour this batter into the prepared baking tray and spread the batter evenly and set it aside.
  8. To make the cookie dough, place butter and sugar into a bowl and beat until it is pale and fluffy, this should take about 3 mins.
  9. Add in the vanilla extract and the egg and beat until it is well mixed.
  10. Now add in the baking soda, baking powder, and salt and beat until it is all well combined.
  11. Add in the flour and mix well and then add in the chocolate chips.
  12. Now spread small spoonfuls of this cookie dough mixture over the brownie batter but do not press it down.
  13. Cover the baking tray with aluminum foil and bake it for 20 mins on the middle rack of the oven.
  14. After 20 mins, remove the foil and continue to bake for another 20 mins until the brownie edges have cooked and the cookie dough has turned golden.
  15. Remove the baking tray and set it aside to cool.
  16. Once it has cooled, transfer the Brookie along with the parchment paper to a cutting bowl and peel it off.
  17. Cut the brookies into 2-inch squares and serve.

  • Brown sugar ½ cup
  • Granulated sugar ½ cup
  • Egg 1
  • Vanilla extract 1 tsp
  • All-purpose flour 1½ cup
  • Baking soda ½ tsp
  • Baking powder ½ tsp
  • Salt ½ tsp
  • Chocolate chips ¾ cup

 For the brownie batter

  • Unsalted butter 12 tbsp
  • Brown sugar 1 ¼ cup
  • Eggs 2
  • Vanilla extract 2 tsp
  • All-purpose flour ¾ cup
  • Cocoa powder ½ cup
  • Chocolate chips ¾ cup
  • Salt 1 tsp

For the marshmallow layer 

  • Mini marshmallows 2 cups
Directions:
  1. Start by preheating the oven to 350 degrees F and line a 13*9*2-inch baking tray with parchment paper and grease it using butter and set it aside.
  2. To make the cookie dough, put the butter in a bowl along with both sugars and cream until it is pale and fluffy.
  3. Add in the eggs one by one and the vanilla extract and mix well.
  4. Now add in the salt, flour, baking soda and baking powder, and chocolate chips and whisk well.
  5. Put this cookie dough mixture in the baking tray and allow to chill.
  6. To make the brownie batter, in a bowl mix together the melted butter along with the sugar, eggs, and vanilla and mix together until well combined.
  7. Now add in the flour, cocoa powder, and salt and mix well so that there are no lumps.
  8. Add the chocolate and mix briefly and pour the batter over the cookie dough.
  9. Now sprinkle the marshmallows over the brownie batter and bake for at least 30 mins.
  10. Once it is cooled, cut into small squares and serve.
