Masterbuilt Smoker Recipes
Masterbuilt smoker recipes are recipes that you can easily recreate using your Masterbuilt smoker.
Baby Back Ribs with a cherry glaze:
Ingredients:
- Baby back ribs 4 racks
- Brown sugar 4 tbsp
- Paprika 5 tbsp
- Coriander powder 2 tbsp
- Fennel Powder 2 tbsp
- Sea salt 2 tbsp
- Cayenne pepper 1 tbsp
- Cumin powder 2 tsp
- Cherry syrup 1.5 cups
Directions:
- Take a bowl and add in the brown sugar, paprika, coriander powder, fennel powder, cayenne pepper, cumin powder, and salt. Mix well and set it aside.
- Remove the membrane from the ribs and rub the spice mix over the ribs coating each side well and set it aside.
- Set the smoker temperature to 120 degrees C and add in the oak wood chips.
- Place the ribs with the bone side down on the grill and let it smoke for 3 hours until the ribs are slightly tender.
- Once the ribs are done, brush them with the cherry syrup and smoke them again for 1 hour but baste with the cherry syrup twice during this time.
- Remove from the grill and baste once more with the cherry syrup and serve.
Smoked Tenderloin:
Ingredients:
- Beef tenderloin 2.5 kg
- Garlic powder 4 tbsp
- Salt 2 tsp
- Ground black pepper 2 tsp
For the sauce:
- Mayonaise 2 cups
- Red wine vinegar 2 tsp
- Minced Garlic 1 tsp
- Water 2 tsp
- Salt ¼ tsp
- Ground black pepper ¼ tsp
Directions:
- Start by preheating the smoker to 135 degrees C.
- Take a bowl and add in the salt, pepper, and garlic powder and mix well.
- Cover the tenderloin with this rub and place it in the smoker for 2 hours.
- While the tenderloin is in the smoker, start making the sauce.
- Combine the mayonnaise, salt, pepper, water, minced garlic, and red wine vinegar in a bowl.
- Mix so that everything is well combined and set it aside
- Once the tenderloin is done, remove it from the smoker and let it rest for at least 10 mins.
- Serve along with the sauce.
Smoked mushrooms:
Ingredients:
- White mushrooms 16
- Bread crumbs ½ cup
- Parmesan cheese ½ cup
- Minced garlic 1 clove
- Diced parsley 2 tbsp
- Olive oil ¼ cup
- Spice rub ¼ tbsp
For the spice rub:
- Salt 4 tbsp
- Black ground pepper 4 tbsp
- Garlic powder ¼ tsp
- Onion powder ¼ tsp
- Paprika 1 tbsp
- Cayenne pepper ½ tbsp
Directions:
- Start by preheating the smoker to 135 degrees C.
- Clean the mushrooms and remove the stems.
- Cut off the extreme end of the stem and discard.
- Dice the stem into small bits and set it aside.
- Take a bowl and add in the breadcrumbs, parmesan cheese, parsley, garlic, spice mix, and 3 tbsp of olive oil.
- Add the diced mushroom stems to this bowl and mix well. Add a little more oil if the mixture is not moist.
- Grease the aluminum tray with a tablespoon of olive oil and arrange the mushroom caps in it.
- Now fill the mushrooms with the prepared mixture.
- Stuff the mushrooms well so that there is no space left within the mushroom cavity and drizzle the remaining olive oil over them.
- Place the disposable tray in the smoker and let it cook for at least 1.5 hours until the filling starts to brown.
- Remove from the smoker once it is done and serve.
Smoked potato salad:
Ingredients:
- Russet potatoes 450 gms
- Finely chopped red onion ½ cup
- Chopped pickles ½ cup
- Hard-boiled eggs chopped 3
- Mayonnaise â…“ cup
- Cider vinegar 2 tbsp
- Dijon mustard 1 tbsp
- Salt to taste
- Coarsely ground black pepper to taste
Directions:
- Place a handful of mesquite wood chips in the wood tray and preheat the smoker to 110 degrees C.
- Clean and peel the russet potatoes and set them aside.
- Take a pot and fill with water and add in the potatoes and let them boil for at least 20 mins.
- Drain the potatoes and dry them using paper towels.
- Place the potatoes on the smoker rack and close the lid.
- reduce heat to 90 degrees C and let it smoke for at least 2 hours and change the wood chips after 45 mins.
- Dice the potatoes and place them in a large bowl.
- To this bowl, add in the rest of the ingredients and mix well.
- Cover with lid and place in the refrigerator to chill before serving.
