The white Asparagus recipe is a last-minute side dish idea that you can easily throw together.

What is White Asparagus?

White asparagus is a type of asparagus that gets its name due to its white color.

White asparagus is produced by covering the growing shoots with soil or black plastic thus preventing sunlight from reaching them and thereby preventing photosynthesis from occurring.

 What is the difference between green and white asparagus?

Beyond the obvious difference in color, green and white asparagus differ in taste with white asparagus having a sweet and delicate taste as compared to green asparagus.

White asparagus is thicker than green asparagus. The thicker stem of the white asparagus also means that it takes a little longer to cook as compared to green asparagus.

Roasted White Asparagus

Roasted White Asparagus

Ingredients:
  • White asparagus 1 bunch
  • Olive oil 3 tbsp
  • Capers 3 tbsp
  • Pine nuts ¼ cup
  • Chopped dill for garnish
  • Salt to taste
  • Pepper to taste
Directions:
  1. Start by preheating the oven to 425 degrees F and line a baking sheet with parchment paper and set it aside.
  2. Remove the ends of the white asparagus and peel off the tough outer layer of the stem and spread the asparagus on the baking sheet.
  3. Cover the asparagus generously with olive oil and season with salt and pepper.
  4. Spread the capers and pine nuts over the top and pour a little more of the olive oil.
  5. Now let it roast for at least 10-15 mins until it turns golden brown and is tender.
  6. Garnish with dill and serve.

Ingredients:
  • Bread 2 slices
  • Garlic clove 1
  • Sea salt 1 tsp
  • Parsley 1 handful
  • Zest of 1 lemon
  • Olive oil 1 tbsp
  • White asparagus 1 bunch
  • Butter 50 gm
  • Juice of 1 lemon
  • Parmesan to taste
Directions:
  1. Preheat the oven to 450 degrees F and line a baking tray with parchment paper and set it aside.
  2. Remove the bread crust and roughly chop up the bread and set it aside.
  3. Take a food processor and add in the bread, olive oil, garlic, parsley, salt, and lemon zest and blend until it produces breadcrumbs.
  4. Spread these breadcrumbs on the baking tray and bake until they are golden brown.
  5. Break off the extreme end and peel off the outer tough and fibrous layer of the asparagus stem and steam the asparagus for 15 mins using a steamer.
  6. Now place a small pan over medium heat and add in the butter and lemon juice and whisk until the butter has melted completely.
  7. Place the steamed asparagus spears on a platter and cover with the breadcrumbs and parmesan cheese.
  8. Now pour the lemon butter over the breadcrumbs and garnish with parsley and serve.

White Asparagus with hollandaise sauce

Ingredients:
  • White asparagus 1 kg
  • Egg yolks 2
  • Warm water 1 tbsp
  • Lemon juice 1 tbsp
  • Salted butter ½ cup
  • Chives 1 tbsp
  • Dill ½ tbsp
  • Salt to taste
Directions:
  1. Cut off the extreme end of the asparagus stem and peel off the tough and fibrous outer layer and keep the asparagus spears aside.
  2. Steam the asparagus for at least 15 mins using a steamer.
  3. Prepare the hollandaise sauce by adding the egg yolks to the blender along with warm water and lemon juice.
  4. Blend for at least 30 secs until the mixture turns frothy.
  5. At this stage start pouring the butter in slowly and keep blending.
  6. Once the hollandaise sauce is ready, pour it into a bowl and set it aside.
  7. Spread the steamed asparagus on a platter and season it with salt.
  8. Now generously pour over the hollandaise sauce.
  9. Garnish with fresh dill and chives and serve.
  10. Alternatively, you can just dip the seasoned steamed asparagus in the hollandaise sauce and enjoy.

Ingredients:
  • White asparagus 1 bunch
  • Sugar 1 tsp
  • Salt 1 tsp
  • Unsalted butter 1 tbsp
  • Water 2 cups
Directions:
  1. Fill a pot with water and place over high heat.
  2. Now add in the butter, salt, and sugar and bring it to a boil.
  3. Cut off the extreme ends of the asparagus spears and peel off the tough outer layer and set them aside.
  4. Place the asparagus in the pot and reduce the heat to low and allow it to simmer.
  5. Let the asparagus cook for at least 10 mins.
  6. Once it is done, drain the water.
  7. Place the asparagus on a platter and serve.
